Oatmeal Banana Pancakes

At 9 months pregnant, sometimes I just don't have it in me to make a well balanced meal that includes all the colors of the rainbow...enter easy peasy Oatmeal Banana Pancakes. I feel okay about giving them to my toddler (Sloane) because after all, they are made of wholesome ingredients.  They take absolutely no time to whip up, I always have these ingredients in my pantry, and as a result, they've saved me many times in a pinch. I hope you love them as much as we do! 

Ingredients/ Directions

Combine 1 cup of quick oats, half of a smashed ripe banana, 1 teaspoon of vanilla, 1 egg, a dash of banking powder and 1 cup of milk.  Mix together until you can scoop out batter. The consistency should be pretty thick. Make your pancakes in a buttered non-stick pan over medium-low heat. We like to top them off with (more) butter and powdered sugar but use whatever you like. They're sweet enough to eat just as is with the ripe banana but I am a butter addict.
